The low-tension spiral coolers

The low-tension spiral coolers from AMF Bakery Systems are designed for high operating efficiency at minimum power requirements. The spiral cooling tower entry/exit configuration options permit the most efficient use of available plant space. The heavy-duty construction consists of quality materials and components, assuring high performance, minimum maintenance and longevity. A modular cage main drive, take-up, infeed conveyor and discharge conveyor allow for fast installation and start-up.

MAXIMIZE BELT SPACE

BakeTech MaxiSaver product cooling system uses the same construction used in BakeTech's proven MaxiSaver proofers. It features wide, 38-in. by 12-in. stainless steel grids that prevent any jumbling or bottom sanding during cooling. Loaves of bread fit two abreast or six across, and buns can fit up to eight across, saving space and lowering belt speeds.

PREVENT SPIRAL BREAKDOWNS

Ashworth can identify and prevent

Ashworth can identify and prevent unexpected, time-consuming and expensive breakdowns while extending the life of the spiral belt with its new Tension Gauge. The Tension Gauge records a belt's tension in each tier of a spiral. Then, the Ashworth Factory Service can make recommendations to correct unforeseen or potential problems. Measuring belt tensions of up to 650 lb. in spiral systems, the Ashworth Tension Gauge allows for “more than normal“ operating tensions to account for every possible spiral application. It is designed to operate in ambient and freezing conditions, so it can be used within coolers. The Tension Gauge can be used on virtually every spiral with tier spacing as low as 2 in.; therefore, the belt does not need to be an Ashworth belt to be tested.

IMPROVE HEARTH BREAD WITH MALT

Hearth bread baking experts agree that adding malt to a formula contributes greatly to baking success. Tests against hearth breads made with added sugar, added shortening, egg white or nonfat dry milk demonstrate that malt alone improves hearth bread's flavor, freshness, volume, symmetry, crust color, baking evenness, bread and shred and grain. Malt also supplies maltose for increased yeast activity and browning reaction. It also allows for greater tolerance in formulation, mixing and bake conditions.
