Baking Management: What type of omega-3s does TINE produce?

Bernhard Azinger: The TINE EPADHA Oil 2100 is specially designed for bread and bakery products. The oil has a neutral aroma and flavor. It also is easily incorporated into the bread in the baking process. This oil blend also is cost effective when compared with other sources of EPA and DHA, such as fish powders or encapsulated products, used in the bakery industry. In addition, TINE EPADHA emulsion can be a suitable solution for some specific bakery applications.

BM: Describe the health benefits associated with TINE's omega-3s.

BA: TINE's marine omega-3 oil and emulsion is based on the long-chained omega-3 fatty acids EPA and DHA, and is produced from a combination of high quality raw materials in a controlled production process. Low oxidized marine oil and high application know-how makes TINE unique when it comes to developing and producing various functional food products with omega-3s.

BM: Describe some baked applications that can use TINE's omega-3s, as well as how the product can be incorporated into the baking process.

BA: We have experience working with bakeries that produce a variety of different omega-3 breads containing high levels of EPA and DHA. Most of the breads contain 125 mg to 300 mg EPA and DHA per 100 g (about two slices of bread). The breads contain different ratios and combinations of whole grains, dark, white or wheat flour — all at various shelf lifes.

BM: How can I learn more about TINE and its omega-3s?

BA: TINE is Norway's largest producer, distributor and exporter of dairy products. Jarlsberg is the main product for TINE's international venture. Our U.S. production of Jarlsberg gives us the opportunity to grow beyond the framework conditions for Norwegian exports. Now we have our own U.S. subsidiaries.

TINE EPADHA omega-3 oil and emulsion are sold via our ingredients division. TINE Ingredients is a major supplier to the food industry. Our ingredients team works in collaboration with our R&D department and customers. TINE can provide support and guidance in the development of new formulas and assist with testing in your own baking facilities.
